Responsibilities of the Indian Cuisine Head Chef include :

Organizing all resources within the kitchen and other areas.

Ensuring timely preparation of food according to the set menu and within the specified costs.

Maintaining quality, quantity, hygiene, and presentation standards, with a focus on minimizing wastage.

Planning and costing menus in coordination with the deputy project manager, ensuring variety and client satisfaction within budget.

Assisting the storekeeper with provisions planning.

Allocating work to kitchen staff.

Preparing and cooking dishes when required.

Ensuring proper pre-preparation and mise-en-place activities.

Maintaining cleanliness of the kitchen area.

Observing safety rules and supervising to ensure compliance with HSE policies and discipline.

Following all norms, procedures, policies, and maintaining records related to HSE / HACCP standards.

Reporting incidents and hazards promptly and taking necessary actions.

Training at least one assistant kitchen staff for promotion eligibility.

Ensuring sanitation of kitchen, stores, and equipment.

Participating in and leading HSE meetings.

Adhering to the company's HSE plans and targets.

Maintaining personal and staff grooming and hygiene standards.

Overseeing store management, including perishables and frozen items.

Ensuring proper data management and following company methodologies.

Respecting and implementing QHSE policies and rules.

Possessing thorough knowledge of Indian cuisine and food safety standards like HACCP.

Demonstrating strong leadership and training skills.

Communicating effectively in English.

Preferably having experience with international hotel chains or catering services.
