General Duties and Responsibilities : Garde Manager The ideal candidate will be a competent all‑rounder with a banqueting background. They will co‑operate with a significant function, guiding the Garde Manger Mezzeh Chef Salad to present the most delicate food, from Arabic mezze to European dishes like galantine and hot snacks.
The garde manager prepares, plates, and cleans cold station items, ensuring the Cold station is clean at night’s end and safely storing food for the next day’s use.
They will also take care of storing and maintaining the equipment, training and supporting junior members of the brigade.
They ensure strict adherence to health and safety legislation at all times.
They maintain the high standards of the establishment and work to enhance the restaurant’s reputation.
They collaborate with other cooks to keep the walk‑in, cold storage and inventory of commonly used items clean and in proper order, and may be responsible for conducting inventory checks to ensure freshness.
The chef or sous chef may assign additional tasks; the garde manager should swiftly and efficiently complete these tasks while having broad knowledge of hygiene and food safety.
The candidate should be capable of handling a significant role and work with his team on the concert line. They will provide top‑notch food presentation spanning Arabic meze to continental cooking such as terrine, galantine, hot appetizers, fatay salad, etc.
Desired Profile : Garde Manager Education : College completion of Chef Diploma
