Scope of Position The Chief Baker is responsible for leading all operational, administrative, and financial aspects of the bakery kitchen at Mandarin Oriental, Doha. This includes production for banquet services, in‑room dining, the Mandarin Cake Shop, and the Gelato Shop. The role ensures consistency in product quality, food safety, and presentation standards across all bakery operations. Reporting to the Executive Pastry Chef, the Chief Baker plays a key role in menu development, staff leadership, training, cost control, and compliance with hygiene and safety regulations. The position requires strong coordination with other culinary and service departments, a commitment to excellence, and the ability to manage a high‑performing team in a dynamic, multicultural environment.
Key Responsibilities
Oversee the full scope of bakery operations including production planning, menu development, quality assurance, and outlet coordination.
Lead and train bakery team members, ensuring skills development, performance management, and scheduling are aligned with business needs.
Ensure all bakery items meet brand standards in taste, presentation, and authenticity, while maintaining cost controls and recipe accuracy.
Maintain compliance with hygiene, sanitation, and food safety protocols in accordance with internal and local regulatory standards.
Support guest satisfaction by accommodating special requests and ensuring high‑quality service delivery across all food and beverage outlets.
Collaborate with various departments on promotional activities and seasonal events, and facilitate efficient interdepartmental communication.
Contribute to administrative functions, including training documentation, holiday planning, performance reviews, and cost reporting.
Qualifications
High School qualification or equivalent.
Degree or Higher National Diploma in Hospitality / Culinary arts.
Experience as Chief Baker in a high‑volume restaurant with highest levels of service (preferred).
A minimum of 4 years of experience working in a 5‑star hotel or free standing restaurant environment.
International work experience in at least two of the following regions : Asia, Europe, North America and preferably the Middle East.
