Key Responsibilities
Team Leadership & Supervision
- Lead, coach, mentor, and motivate a large stewarding team
- Ensure all stewarding staff arrive on time, properly groomed, and ready for their shifts
- Assign workstations and tasks during line-up / briefings (start of shift) and pass on necessary information about events / banquet orders
- Conduct individual development discussions, performance reviews, and corrective action when needed
- Provide training to kitchen stewards in all duties, including chemical usage, sanitation standards, equipment operation, etc.
Operational / Back-of-House Management
Supervise the cleaning, organization, and sanitation of kitchens, storage rooms, dishwashing areas, back‐of‐house hallways, loading docks, and equipmentOversee opening and closing tasks / checklists for stewarding shiftsCoordinate with culinary, banquet, and restaurant teams to ensure that stewarding support is aligned with service needs and event setupsConduct regular inspections / walkthroughs with the Chief Steward / Assistant Steward to ensure compliance with cleanliness, equipment condition, storage, and sanitation standardsManage inventory : chemicals, cleaning supplies, replacement equipment, etc.Monitor breakage of items (china, glass, silverware) and remove chipped or damaged items from circulationEnsure all equipment is working properly; report or coordinate maintenance / repair as neededHealth, Safety & Compliance
Enforce hygiene, sanitation, and food-safety protocols, including local health regulations (e.g., HACCP) and the hotel standardsEnsure proper handling, storage, and use of cleaning chemicalsMaintain a safe working environment; enforce safety rules, proper use of PPE, correct chemical dilution, etc.Take part in or lead health & safety / hygiene inspections, pest control measures if neededEnsure compliance with environmental / waste management policies (garbage removal, recycling) as per hotel standardsBanquet / Events Support
Review Banquet Event Orders (BEOs) to ensure stewarding requirements (china, glassware, silver, equipment) are metEnsure timely setup and breakdown of banquet equipment in coordination with F&B / culinary teamsMaintain ready stock of items for special events; ensure storerooms are organizedCommunication & Coordination
Facilitate inter-departmental communication (e.g., with kitchen, F&B, events) to align on requirements, shifts, and inventoryParticipate in departmental meetings, shift briefings, and operational planningMaintain accurate records (logbooks, shift reports, inventory, breakage)Staffing & Scheduling
Assist in roster planning / scheduling for stewarding teams to match demand (peak service times, banquet events)Fill stewarding positions as needed (e.g., assign extra staff during high-volume or events)Provide shift handovers / pass-offs (using logbooks or written reports) to next shift supervisorQualifications
Previous stewarding supervisory experience in a luxury hotel and / or resortAbility to manage a large team, coach, and develop team membersGood understanding of cleaning chemicals, sanitation techniques, kitchen equipment, dishwashing machines, back-of-house workflowsFamiliarity with food-safety standards (HACCP), health regulation complianceGood verbal and written communication (English), ability to coordinate with multiple departmentsAble to oversee inventory, scheduling, event setup, and maintenance tasks#J-18808-Ljbffr
