Ensures efficient running of the Stewarding department, contributing to the overall success of all restaurants and events, in accordance with the hotel’s standards. Responsibilities
Supervise and participate in the cleaning, maintenance, and sanitation of chinaware, glass, silver, kitchen equipment and kitchen production areas in accordance with production requirements and quality standards while maintaining a safe work environment. Clean and sanitize chinaware, glassware, and silverware using the dish washing machine; load and unload dishware and flatware from dish washing machine and store properly. Clean and sanitize all ovens, steam kettles, mixers, and other kitchen equipment as well as all kitchen drains, sinks, floors, and walls; clean, dust, seep, mop, polish, scrub, wash, strip, and buff kitchen and pastry shop production areas and hallways. Clean and sanitize all pots, pans, and kitchen utensils using the correct cleaning and rinsing solutions. Safely set-up, clean, and utilize the silver burnishing machine to clean, polish, sort, and transport silver following a daily or weekly schedule; place damaged or excessively worn pieces in a designated area for repair. Safely utilize and store all cleaning compounds, chemicals, and materials including soaking solution utilizing the correct protective clothing. Organize work assignments, make recommendations in regard to training, performance evaluations, and discipline for stewards. Work harmoniously and professionally with co-workers and supervisors. Clean messes and spills immediately. Assist with inventory of chinaware, glass, and silver. Conduct daily briefing for stewarding associates on their shift. Communicate effectively with superiors, stewarding associates and other section heads. Oversee the punctuality and appearance of all stewarding associates under your direction, ensuring they wear the correct uniform and maintain a high standard of personal appearance and hygiene, according to the hotel and department’s grooming standards. Assist in the training of associates to ensure they have the necessary skills to perform their duties efficiently. Supervise the associates within the department, ensuring adherence to standards and methods of service as stated in the Departmental Operations Manual. Develop the skills and effectiveness of all stewarding associates through appropriate training, coaching, and mentoring. Support, demonstrate and reinforce Rosewood Hotels & Resorts’ Values and Culture Characteristics. Ensure associates understand and adhere to rule and regulations. Ensure associates follow all hotel, company and local rules, policies and regulations relating to fire and hazard safety, and security. Standard Responsibilities

Ensure that any accidents are reported immediately in accordance with correct procedures. Attend Statutory Fire, Health & Safety training and abide by all rules concerning Fire, Health & Safety.
