Description
Job Title : Head Cook
Company : Sugar and Spice
Section : Kitchen / Back of the House
Reporting To : Operations Manager
Responsible For : Food Preparation & Managing Production Team
MAIN DUTIES :
Supervise and manage the kitchen production team during shifts.
Oversee meat preparation processes, including cutting, trimming, marination, and portioning.
Prepare sauces and marinades according to standardized recipes and ensure consistency.
Ensure timely preparation and packaging of all menu items according to company standards.
Maintain recipe accuracy, portion control, and product quality.
Set up stock stations with the necessary ingredients and supplies for each shift.
Monitor inventory levels and report shortages to management.
Enforce strict adherence to food safety and hygiene standards.
Maintain cleanliness and sanitation throughout the production area.
Ensure proper use and maintenance of kitchen equipment.
Train and guide junior kitchen staff on preparation techniques and operational standards.
Contribute ideas for improving workflow, efficiency, and cost control.
Work under pressure to meet deadlines while ensuring consistency and quality.
Participate in staff meetings, training sessions, and continuous improvement initiatives.
QUALIFICATIONS :
Male candidate (as per operational requirements).
Minimum 3 years’ experience in kitchen production, line head, prep cook, or similar role.
Strong knowledge in meat handling and preparation : cutting, trimming, marination, and portioning.
Experience in sauce preparation and flavor balancing.
Familiarity with various cooking methods, kitchen equipment, and industry best practices.
Strong leadership and team management skills.
Accuracy, speed, and attention to detail in executing tasks.
Physically strong and able to handle high production demands.
Good understanding of food safety, HACCP standards, and sanitation practices.
Culinary diploma is an advantage but not mandatory.
Willingness to work graveyard shift and overtime when required.
